Eating healthy is something I struggle with. In my hometown of pizza, wings, roast beef, and Italian favorites it seems temptation is everywhere. Plus- bottom line- I like to eat. So I'm always looking for satisfying food recipes to ease the draw to all that's just a phone call away from my doorstep.
This side has become a staple for us. It's really delicious, healthy, and easy.
For me it could be a meal. My husband might disagree as he's a meat lover.
Try it, really.
Warm bean and arugula salad
A "pan turn" of olive oil
1 med sweet onion chopped
2 cloves garlic, pressed.
1 can small white beans (great northern, cannellini etc) rinsed and drained
1/2 to 3/4 cup chicken stock or broth (veggie broth fine to make it truly vegetarian)
1 bag or 4 cups fresh arugula (or sub baby spinach)
Salt & pepper
-heat pan to med-low. Add olive oil, onion and garlic and lightly sauté, careful not to burn, at least 5 minutes but the longer the more flavorful it gets,
-add the broth (start with 1/2 cup) and the beans. Simmer 5 minutes or more.
- add greens by the handful and wilt them into mixture.
Season with salt and pepper to taste
