It Just Might Be...

The best thing you can do with spinach.

Who would have thought these simple ingredients would make such an amazing salad.  Even my husband who frowns upon spinach gobbles it up.  The kids too, because green things make you run fast. (-;

I have to give credit to my friend Mary Jo who introduced me to this.
She said that in Italy this was the salad she had while basking on a terrace overlooking Rome...



Wilted Spinach Salad 
1 bag/package of baby spinach (cleaned and dried)
1/4 cup good quality balsamic vinegar (more if you feel you need it)
1 handful of pine nuts/sunflower seeds/ other nuts 
salt & pepper to taste
olive oil 
(yes, that's it!!)

In the bottom of a salad bowl, pour the vinegar.  Add the spinach, pine nuts, salt and pepper.  Toss and cover for about a half hour/ 45 minutes, tossing occasionally as the spinach wilts.  Drizzle with a small amount olive oil right before serving and toss.

I made it for a family party and got 4 texts the next day asking for the recipe. While pine nuts are pricey. they are fabulous in this salad.  I found them at Aldi for $1.99 a bag- but haven't seen them since! The sunflower seeds are definitely a nice add if pine nuts are overdoing the budget...
