"Kryptonite" Meatloaf Muffins



  • Loved these! 
  • I am a huge fan of blue cheese and beef together (not a blue fan- I bet feta would be great, or even shredded cheddar).  
  • Getting the kids to eat unidentified items such as parsley, small bits of onion, etc.. in meatballs, meatloaf, soup, etc... can be tricky.  I used my food processor to finely, finely chop the spinach and onion and I used a milder blue cheese.
  • Hoping to not have to fix another dinner of sliced cheese, carrots, cucumbers, and a slice of whole grain bread I said "wow, look at the kryptonite in this meat!!"  While I realize kryptonite is the thing that makes Superman go into some sort of coma or something, they love all things superhero.  
  • I saw the eyes light up.  The muscles flex.  And the eating began.  And, they loved it.  Especially the green flecks that made them "super strong."  
  • Sad, but true, I lied to my kids... but they ate ate a delicious dinner, and tried something new. Sorry/not sorry. 
  • Blue Cheese Meatloaf Muffins
  • 1/2 lbs lean ground beef
  • 3/4 cup blue cheese (crumbled)
  • 1/2 cup diced onion
  • 1/2 cup bread crumbs (italian)
  • 1/2 cup spinach (chopped fresh)
  • eggs
  • 2 tbsps worcestershire sauce
  • (optional, the last five minutes I glazed them with a ketchup/mustard/brown sugar mixture, except the kids')

  1. Preheat an oven to 375 degrees F . Grease a large muffin pan with cooking spray.
  2. Combine ground beef, blue cheese, onion, bread crumbs, spinach, eggs, and Worcestershire sauce in a large bowl until well blended. Divide meat mixture evenly into the prepared muffin pan.
  3. Bake in the preheated oven until no longer pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
