I am going to post a gluttonous, ridiculous, and completely delicious recipe. So shield your eyes if you're on a diet. Or, make it, cheat on your diet, and bring the rest to a party. This dish is a family recipe, taken from the Edwards family cookbook,circa 1984, printed in dot matrix. These were the days of 3 or more family parties a month, where "what are we eating?" was asked before "what are we doing?".
It's a once a year make for me, and I just finished serving it for my brother-in-laws birthday. So, here goes nothing...
German Potato Salad
5 lbs potatoes
2 tablespoons of cornstarch
1 lb bacon
1 teaspoon dry mustard
2 medium sweet onions, chopped
parsley, fresh or dried (to your liking)
3/4 cup sugar
celery seed or celery salt (a few shakes)
3/4 cup cider vinegar (white or red wine will do, cider gives a nice flavor)
salt and pepper to taste (potatoes can take a lot of salt, but it's easier to start light and add)
1 cup water
Cut potatoes into bite sized pieces and boil until done
Cook bacon until crisp.
Set aside (eat 3 and only 3 slices. When the kids ask what the smell is, say "nothing")
Add chopped onion to bacon grease, cook until clear
Crumble bacon, add to onnions
Mix all other ingredents together Add to bacon/onion mixture and simmer until bubbly and slightly thickened
Pour over cooked potatoes
Serve, or refeidgerate overnight for best flavor and reheat in oven or pan (this is a hot salad)
